I think it's easy to look at this question and say "of course not! The films are sacred! Disney will never remake the episodic stories," but there will come a day when someone at Disney talks about rebooting Star Wars to milk some of the classic characters and storylines for another generation. Nobody thought there would be a sequel trilogy, nor did we ever think there could be standalone films 4 years ago but here we are.
A part of me wishes they never made another Star Wars film after episode 3. The films (at least 4-6) are sacred to me, and the fact that the franchise wasn't being milked like every other brand made Star Wars feel "special." That and ROTJ wrapped up the saga in a neat bow. But now that we're living in a post-Lucas world, I'd really be interested to see a different filmmaker's take on the prequels.
We probably won't see this "alternate SW universe" until after Lucas has passed, but it'll happen eventually. Unfortunately, it likely won't happen until after the copyright has expired and I'm long dead.
